Instructions
Beat the mascarpone well in a bowl and till light and airy.
Next beat the egg yolks and the sugar over warm water in in a bowl.
The mixture, should be light and fluffy.
Once finished, Add the the egg mixture into the mascarpone and beat well.
In another bowl, beat the whipping cream until soft peaks form.
Combine the whipping cream into the egg mixture in parts and fold well.
Only start with a layer of ladyfingers dipped into espresso for seconds and then add the cream mixture and repeat that twice.
Chill overnight
Dust with cocoa powder and serve once it is out of the fridge.
