Instructions
Cupcakes
Preheat oven to 160ºC and prepare a cupcake pan with liners.
Add the dry ingredients to a large bowl and whisk together. Set aside.
Combine the egg, vinegar, water, oil and lemon juice in another medium sized bowl.
Add the wet ingredients to the dry ingredients and mix until well combined.
Fill the cupcake liners about half way and bake for 20 minutes
Frosting
Beat the butter on medium speed until creamy
Add confectioners’ sugar, cocoa powder and milk
Beat on low speed for 30 seconds, then increase to high speed and beat for 1 full minute.
