Quinoa Salad

This Quinoa Salad is super amazing. It may be a little time consuming but trust me, It Is Completely worth it!

This recipe has chickpeas which are really healthy and are a good substitude for protein if you are vegetarian!

All the flavours in this rrecipe just create something totally awesome!

I highly reccomend we start cooking now, because you are missing out on a great recipe!

Before We Start, Check Out The Video:

Ingredients:

Cottage Cheese:

  • 150 Grams of Cottage Cheese
  • 1/2 Tsp of Salt
  • 1/2 Tsp of Pepper
  • 1/2 Tsp of Indian Chaat Masala

Chickpeas:

  • Chickpeas
  • 1/2 Tsp of Paprika
  • 1/2 Tsp of Salt
  • 1/2 Tsp of Pepper
  • 1/2 Tsp of Indian Chaat Masala

Brocoli:

  • 1 Floret of Broccoli
  • 1/2 Tsp of Salt
  • 1/2 Tsp of Pepper
  • 1/2 Tsp of Sugar
  • 1 Tsp of Garlic
  • Balsamic Vinegar

Bell Peppers:

  • 1 Bell Pepper
  • 1/2 Tsp of Paprika
  • 1/2 Tsp of Salt
  • 1/2 Tsp of Pepper

Carrots

  • 2 Carrots
  • 1/2 Tsp of Paprika
  • 1/2 Tsp of Salt
  • 1/2 Tsp of Pepper
  • 1 Tsp of Garlic
  • 1 Tsp of Lemon Zest

Quinoa:

  • 1 1/2 Cups of Quinoa
  • 3 Cups of Water

Extras:

  • 1 Stalk of Celery
  • Spinach
  • Fresh Herbs

Recipe:

  1. First, Marinade the cottage cheese with all the ingredients, Refrigerate.
  2. Next, Bake the chickpeas at 180 C for 47 Mins.
  3. Marinate the Brocoli, Bell Peppers and Carrots with their respective seasonings and bake for 30, 10 and 15 Minuts respectivly.
  4. Now cook the quinoa in the water for 20 Mins.
  5. Cook The cottage cheese after marination.
  6. And Serve!
